The bunch is pressed softly and quickly with a yield of free-run juice of 40%. Fermentation takes place at a controlled temperature of 16 °C and the following year it is carried out the draft. The wine takes place on the noble wine lees 10 years, before being disgorged. It is released 6 months after disgorgement.
